Co-owners and Executive Chefs, Curt and Deicy Steinbecker opened Ondo's in the Fall of 2009 with a vision of creating Denver's finest tapas bar. Trained at "La Escuela de Cocina Luis Irizar" in the heart of picturesque San Sebastian, Spain, the Steinbecker's infuse every dish they create with extensive knowledge and passion for Spanish and Basque country cuisine. Deicy and Curt studied, lived and worked in San Sebastian and Barcelona for 5 years.They arrived from Colombia and the United States, respectively, to attend an intensive two year program at the esteemed culinary school, La Escuela de Cocina Luis Irizar, in San Sebastian, one of the gastronomic centers of Spain.It was here that they first met and fell in love.During this time, they had various internships at some of the most renowned restaurants in the city, including places with three Michelin stars, learning from internationally renown Basque chefs like Juan Mari Arzak and Pedro Subijana.
After graduating, they were fortunate enough to earn their work papers in order to stay in Spain.They took advantage of these additional three years in Spain by gaining hands-on culinary experience at other restaurants in San Sebastian and in another gastronomic center, Barcelona.It was during this time that they learned that Deicy was expecting their first child.Little Maya helped them decide on a new path, moving to Denver and opening an authentic Spanish tapas bar.Curt had previously lived in Denver, which he loved.This made Denver the easy choice for their bar and restaurant and for their new family.
